So, 2020 has been a roller coaster year, am I right? I think this year is all about perspective – If you can change your perspective when things are bad to find the silver lining, then when things get better it will feel euphoric. So, if I am using that mentality, then the spirit world gained a beautiful soul a couple of weeks ago. My gram was the spunkiest lady you would ever meet; I think I definitely inherited some of my sass from her. I loved making the drive up north to visit her and take her on drives around her town of Penetanguishene (it’s real, look it up) or to Georgian bay at the bottom of the hill she lived atop. We would stop and look at the water and not longer than 30 seconds into staring out at the water would she say “Why are we just staring at the water? I see it all the time. Let’s go get a banana split”. She would make the best poached eggs with peameal bacon and was the puzzle queen. Everyone felt welcomed around her — She was loved by so many. I’ll miss hearing her infectious laugh and seeing her kind eyes.

She taught my mom how to make the best blueberry muffins, which our whole family swears by. They are bursting with zesty blueberries and taste best right from the oven with butter. They are also super easy to make and leave the house smelling like fresh baked muffins all day long. So, in honour of my gram’s sweet, sweet soul, here’s the recipe to these sweet, sweet blueberry muffins (which ironically, aren’t too sweet – just the perfect amount). Rest easy puzzle queen.

Gram’s Blueberry Muffins

1 ¾ cup flour
½ cup sugar
1 tbls baking powder
¾ tsp salt
6 tbls cold butter
1 egg
1 cup milk
1 tsp lemon zest
½ tsp vanilla
1 cup blueberries
Directions
- Preheat oven to 400°
- Mix flour, sugar, baking powder, and salt.
- Add the butter to the dry ingredients and cut butter until mixture resembles fine crumbs.
- Beat eggs, milk, lemon zest, and vanilla until blended.
- Add egg mixture to flour and stir. The batter will be lumpy – this is what you want.
- Fold blueberries into batter.
- Pour batter into lined muffin tray.
- Bake for 20-25 minutes, until golden.
